Daddy's birthday carrot cake.

Carrot cake batter with carrot and coconut shavings and all that good stuff.

Cream cheese frosting, almonds on the sides and toasted coconut on the top. :) This was a little bit rushed, but it turned out well for the time crunch and tasted great! My dad liked it, which is what really matters, right? ;)

Crespella. Goat Cheese & Leek Stuffed Crêpe. Pesto. Tomato Confit. Basil Gastrique.

Le Parisien. House-Cured Northwest Prosciutto Pear. Brie. Peach Chutney. Baguette.

Summer Omelette. Vegetables. Fontina. Rissolé Potatoes. Ketchup.

Pumpkin cheesecake.

We also got a couple glazed madelines to go!

Sante is officially my favorite place to get brunch in Spokane. I've yet to go try their dinner though! :)

Curried chicken salad, salad and seven layer bars.

Caitie, Eddie and I cooked dinner!

Curried chicken salad: Indian curry sauce, rotisserie chicken, apples, celery, cashews.

Salad: Romaine lettuce, toasted almonds, grape tomatoes, parmesan cheese, blue cheese vinigrette dressing.

Kathy's seven layer bars--an old favorite of mine! I remember when she would make these for us in high school.. sooo good! :)

Cherry upside-down cupcakes with cream cheese frosting.

I used maraschino cherries with brown sugar and butter to make the upside-down mix and topped that with white cake mix with mixed in cherry sprinkles.

Mmmmm.

Cream cheese frosting and red & clear sprinkles.


I was really happy with how these turned out. Upside-down cupcakes are my favorite to experiment with. I'm going to try a strawberry next!

Note: paper cupcake liners aren't great for this--the foil kind work much better.

Peanut btuter banana muffins with chocolate and butterscotch chips.

I had 6 super ripe bananas so I decided to make banana bread. Well, I was going through recipes and came across some peanut butter banana bread recipes! I LOVE peanut butter and bananas together so I thought--brilliant! Then I went a step further and added my favorite chips--chocolate and butterscotch!

Gooey.

Into the oven you go!

Mmmmm. I love they way they turned out and they were a HUGE hit with my friends. Next time I'm going to add a bit more peanut butter though. :)
