I loooove me some eggplant parm! :)I buy the eggplant bundles at Trader Joe's and they are a lot for one person. I usually prepare one and freeze it--which will last me forever, and eggplant reheats well. I try to eat the other one fresh though, meaning, I'll be posting a lot of eggplant this week!
