Eggplant and sun dried tomato penne with italian herbs sauce

Eggplant, sundried tomatoes, Italian herbs, salt, pepper, garlic, olive oil and grated parmesan cheese with penne.

Mmm! This was delicious! I love eggplant, but have never cooked pasta with it--definitely a great fit.

  1. I love eggplant, too, despite its lack of nutrients. It only has water. But this... this meal makes me really hungry. Do you have any recipe for this, with your personal touches?
