Baked burrito enchilada.

Black beans, tomatoes, onions, corn and rice with "Mexican" spices. It became vegetarian because, well, I don't have any meat. ;)

Tortilla spread with a little cream cheese, cheddar-jack and then the filling.

All rolled up with enchilada sauce and cheese.

Baked. Yums. Like, really yums. I have to say, this was pretty tasty.

I had half of one of these + a little salad + Colts vs. Jaguars game = a great Sunday. Go Colts!
