Lunch at the lake, Coeur d'Alene, ID.

I love the lake. :)

After a wonderful little canoe ride, we had lunch.

This is what Nowell had for lunch. He LOVES this--wild rice, raw tofu and mustard. No joke. ;)

And this is what I ate. Now which looks more appetizing? Just saying.. haha. This was wild rice with peach mango salsa and goat cheese. Delicious.

Fiiiish. Nowell is a pesca-vegan. Very peculiar, but it works for him and we got to eat fish, so it works for me! :)

Mmmmm. I think this night was cod with peach mango salsa.

Simple salad with goat cheese (not for Nowell, of course). :)

Delicious veggie burritos, Joshua Tree, CA.

On the left we have tomato-habanero tortillas and soy chorizo with corn.

These are Baja-Greg style burritos. We have the soy chorizo, corn, fresh jalapenos, cheese, cabbage and salsa on a tomato-habanero tortilla. This was SO yummy!!! We're awesome campers, Greg. :)

Attack of the squirrels, Joshua Tree, CA.

We'd just set up camp and transfered the water from the truck to the table when..

This squirrel jumped right up on the table and bit into the plastic! It knew right away that those jugs were water. CRAZY.

Hey, it's the desert, in the middle of July, and the squirrels.. and everything else were thiiiirsty. We moved the water back into the truck. :)

Central Market picnic and bat watching, Austin, TX.

P's sister Diana made us some excellent cookies for our bat-watching adventure!

I LOVE Diana's chocolate chip cookies! Must get recipe.

We stopped at Central Market, a super cool grocery store that I definitely approve of, and got some stuff for our tailgate picnic! :)

Shin ramyun (신라면), Lake Travis, TX.

YAAAAAY!!!! After all of that crazy (good) food, I needed something Korean! My family usually has Shin ramyun on trips so this was perfect! Thank goodness P's uncle brought some. It was divine. :)

Well, this was the first time I remember catching and eating fish, but I had a little bit. ;)

We had marinated beef and chicken, shrimp, red onion, cherry tomatoes, red bell peppers and mushrooms. Yum!

P's sisters made waffles for breaky! Fruit was gone by the time we got there, but they were yummy with just syrup, too.

We cheated and used the grill to toast the marshmallows.

Perfectly toasted marshmallow, if I do say so myself! :) The chocolate was frozen so it didn't melt so well, but it was still a scruuumptious s'more. Mmmmm mmmmm mmmm!

The pasta was very well cooked and I liked the asparagus shavings a ton. What a great idea. The whole dish was a bit bland for my tastes, but it's hard to cook for 15 people and it was a nice meal.

The resort pool house had activities everyday for the kids. I of course, decided to play kid and join in! :) Here is the simple, but lovely cookie I made for myself.

I didn't get a photo, but the first night at Lake Travis, we had Goode Co. BBQ from Houston. P's brother brought it up for us. He event took a brisket to them and they smoked it for him! We had brisket, ribs, jambalaya, beans and corn. It was all very good and it was my first Texas BBQ!
