Greek yogurt, bacon, parm baked Brussels sprouts.

Blanched Brussels sprouts.

Greek yogurt, bacon, parmesan, garlic, olive oil, salt and pepper.

I mixed the Brussels Sprouts into the sauce mixture and put everything into a casserole dish. I stuck it in the oven for about 10 minutes. I must have forgotten to take a photo after, but it looked really nice, most of the yogurt and cheese baked into the sprouts so although they didn't look very saucy, they were quite flavorful!

Mashed with cilantro. Then salt, pepper, lime juice and red onion was added to this.

Pico de gallo.

I had a lot of cilantro and my roommates had some tomatoes so I decided to make some pico. I used: tomatoes, onion, cilantro, jalapenos, salt, pepper, lime juice.

And into tupperware you go! Mmmm--it turned out very well if I do say so myself. :)

Italian dinner for P.

Making my first meatballs! Woohoo! I've never made my own burger patties either. This was very exciting. So this was: ground beef, bread crumbs, egg, parmesan cheese, Italian seasoning, parsley, garlic powder, salt, pepper. So easy! :)

All rolled and ready to bake! I thought doing them stovetop would be a little to messy and fussy so I decided to bake.

YAAAAAY! My first meatballs! :) Big and juicy. :) The parm kinda exploded. Haha. I figured it would. Anyhow, they were yummy and I kept them in the oven to keep warm.

The saaaaauce! :) I LOVE the Trader Joe's marinara sauce. I used that and then added garlic, chopped onions and bell peppers.

Caramelizing the veggies for the bruschetta. Yellow onion; red, orange and yellow peppers; tomatoes; garlic, parsley and olive oil.

Balsamic vin bruschetta. I toasted French bread so it's pretty crunchy. Then I put on a bit of my balsamic vin dressing and then top with caramelized veggies. I don't make this often, but this is something I really like to make. It turned out well this time too--good bread.. more on that later..

Mixed-greens salad with tomatoes, toasted almonds, parm and my balsamic vin dressing.

Garlic bread! I used Safeway French bread, which I've never had before, but it's really VERY good. Soft and a good size. For the spread I simply used butter, garlic and parsley. I used a little less butter and more garlic than normal recipes call for, but that's how I like it. :)

Spaghetti and meatballs! This was really yummy! :)

Altogether a wonderful Italian meal and P was very happy with it, too!

Blurry. I'm obsessed with these sweet potato fries! Usually when you get sweet potato fries they are the thin cut that I don't like with sweet potato. These were soft and amazing! With a little warmed goat cheese--mmmmm!

I didn't have my camera so I was waiting on Caitie's photos for this post. Gosh, we had a heckuva time finding this restaurant though! Most bizarre location--but that's typical for Spokane, I suppose. ;)

Zip's fries and fry sauce, Spokane, WA.

OMG. These are my favorite fries in the entire world! And fry sauce! OMG! FRY SAUCE! Haha. Fry sauce is a mysterious thing--some people think it's just a mix of ketchup and mayonnaise, but I've had fries with ketchup and mayo and it's not fry sauce. Maybe some sour cream in thrown in there or something? Hmm.. perhaps. Anyway--this was dinner and it was divine!

Grilled vegetable balsamic salad and baked potato sliders.

Grilling up some onions, mushrooms and red bell peppers! I sauteed them in some olive oil and then added just a splash of balsamic vinegar and some ground pepper at the end.

Tossed into my salad with a little parmesan and some of my leftover dressing from earlier. Oh man, I'm making myself another one of these for lunch tomorrow.

Mini baked potatoes! Split baby red potatoes with parm, sour cream/cream cheese mix, chives, bacon bits and ground pepper. They're so cute! And yummy and easy to make!
