
I'm awful and go easy by getting a rotisserie chicken. Here it is, pulled apart. This will be used for a few recipes coming up in the next few days.. :)

One eggplant, sliced up.

And pan fried with a little olive oil and water until soft.

Then mixed with Jalfrezi curry sauce and chicken.

And not my best plating, but I was in a rush to eat and run out the door! Haha. So here it is, over rice. The eggplant was sooo soo nice. I really do love eggplant. The curry sauce was nice, too, but I think I prefer Jalfrezi cold, with
my curry chicken salad!
